The COVID19 virus has crippled the world. It has done untold damage to our physical health, our mental health and our financial health. But here on Isla Bonita, the damage is almost beyond measure.Ambergris Caye’s only industry is tourism.Coming off an incredibly short and slow “high season” many of our businesses, and their employees, were already struggling. With our first Coronavirus case on March 23, the island was put on complete quarantine. This was coupled with the closing of the only international airport, in Belize City, the Philip Goldson International Airport.Tourism was instantly and completely gone.We instantly had a large number of people who could no longer feed themselves.Quickly, people started to step up to help their friends and neighbors – their island families. Hope Haven, a long time resource for those in need on the island sprang into action. Cultural groups, including the Muslim and Chinese communities came together to donate food. Churches and individuals came forward to offer clean drinking water for families, as without income not only could people not buy food, but they couldn’t purchase potable water either.And then Maresha Reid came forward.Maresha Reid isaw people struggling to feed themselves and her natural instinct was to feed them. She realized much of the food being donated was shelf-stable items, given many Belizeans do not have refrigeration. And these, as a result, were high sodium, preservative-filled canned goods. She asked – “Wouldn’t it be better to provide home-cooked, healthy and nutritious meals to people instead?”The San Pedro Hot Lunch Program was born!Now, three times a week, Maresha and her crew of volunteers serve hundreds of hot meals. As of the writing of this book, they are serving approximately 350 meals per day!But there are so many more people they have to turn away.This is where this cookbook comes in.100% of the profits from this book will be donated to the San Pedro Hot Lunch Program, to purchase food and supplies to continue to feed those in need on the island. You’ll find dozens of Belizean dishes and dozens of non-Belizean dishes. At first, I had thought about doing only Belizean dishes. But I quickly realized one of the things I love about this country, and about the island specifically, is it’s truly a melting pot of cultures from all over the world.
