Description

Abstract: A hassle-free approach to "heart healthy" cooking and tasty eating is presented in this cookbook for cardiac patients and those concerned about their health. The practical applications of low-fat, low-salt, low-sugar, and low-cholesterol principles are explained within the context of the contemporary American diet. Background information is provided about the normal functions of the heart and the coronary arteries as well as the development and consequences of coronary heart disease. Results of research studies examining certain components of the American diet (i.e. fat, cholesterol, salt, sugar) and their association with cardiac disease are reviewed. Four basic principles of the author's "Positive Diet" are to reduce intake of 1) animal fat and cholesterol, 2) butterfat, 3) salt, and 4) refined sugar. Combining the basic principles of the diet with the basic tools of meal planning and creative substitution is recommended for making permanent, healthful dietary changes. Specific guidelines are provided for implementing each basic diet principle. The risks associated with obesity and the basic principles of weight reduction are outlined. Recipes are introduced for 1) appetizers and beverages, 2) breads and breakfasts, 3) soups and sandwiches, 4) salads and salad dressings, 5) vegetables, 6) seafood, 7) poultry, 8) red meats, and 9) desserts. Additional features include 1) sample menus, 2) food composition tables for fat, sugar, and sodium, 3) definitions for cooking terms and procedures, and 4) suggestions for eating away from home. Source notes, a bibliography, and subject and recipe indexes are included. (aje).
